Candle Cupcakes

Cakes:
250g self-raising flour
10ml baking powder
125ml soft brown sugar
125ml sultanas (soaked in boiling water for 15 minutes and drained) - optional
15ml honey2 bananas (mashed)
250ml finely grated carrot
2 eggs60ml water
65ml oil

Sift flour and baking powder.
Add sugar, sultanas, banana, honey & carrots, mix well.
Beat eggs, water and oil and gradually add to flour mixture.
Bake in muffin pan or cupcake holders at 180°C for 20 minutes.

Topping:
500ml icing sugar
30ml smooth cottage cheese
A drop of warm water (if needed)

Combine icing sugar and cheese, adding enough warm water to give a firm spreading consistency.
Spread over cup cakes while still warm.
Put candle in the centre (adult supervision required for small children).
